Interview with Maria, Sous Chef

Maria has been with us at English’s (on-and-off) for a number of years, and is currently our sous chef. We sat down and asked her a few questions about her cooking career, and what she loves doing in her spare time.

What’s your past experience in the restaurant business?
It’s been a while now; I’ve been in the industry for years. In the past I’ve mainly worked in seafood and vegetarian restaurants.

When did you begin your career in the kitchen?
I started cooking professionally at the age of 19.

What do you enjoy most about your job?
Obviously cooking. If not, I would choose another profession! This is the third time I’ve worked at English’s (third time’s a charm!) and it feels like being at home, but with a big family.

What’s your favourite dish?
I couldn’t pick just one. As long as the quality of the product is good, then the taste and the magic comes afterwards.

Do you have a favourite ingredient?
Garlic.

If you could cook for anyone, who would it be and what would you cook?
My Mum. I would open the fridge and let my inspiration take me.

Do you get a lot of feedback from customers?
We get feedback through the waiting staff, and through social media – like TripAdvisor and Facebook.

What do you like doing in your spare time?
I like photography, playing guitar, gardening, and catching up with friends.

Have you ever seen any of the infamous ghosts that are said to haunt the restaurant?
Not yet, but I cannot wait…
