Richard & Heather Hayward are the 7th generation of the family to farm the oysters in West Mersea. Dredging the river Blackwater for oysters then laying them in their own tidal beds to strengthen and fatten on the nutrients of the marshland.
West Mersea Native
The native oyster (ostrea edulis) is indigenous to North West Europe and has a firm textured meat, bursting with flavour, saltiness and a fresh metallic finish on the back of the throat, owing to the high zinc content.
