Wine pairings: Isle of Gigha halibut, confit of leeks, sauce Américaine

In the second part of our series on wine pairings we’ve picked a particular favourite with our staff, ethically sourced Isle of Gigha halibut served with a confit of leeks and sauce Américaine.

Isle of Gigha halibut

The dish
A plate of sunshine in a dark and drizzly winter, this halibut dish has been a hit since it made it onto the menu back in November 2015, and we’ll be keeping it until the spring menu launches in March.

Mercurey white wine

Mercurey Blanc 1er cru Clos des Barraults Michel Juillot 2007, Burgundy France (13.0% abv)

The wine
Better known for its red wine, Mercurey is the largest red wine appellation in Burgundy, with around 80% of its production being red. This halibut dish, however, calls for a crisp white wine, so we’ve selected a bottle from their limited run of white. Aged for 10 months in oak, this stunning wine has a toffee apple finish, complimenting the soft sweetness of the leeks.
